Dining Series at The W with BEN MURPHY

Dining Series at W London kicks-off its next collaboration with one of the UK’s most ground-breaking young talents, Ben Murphy. Murphy’s menu, served in the hotel’s bar and lounge, The Perception until the end of February 2019, will take guests on an exciting journey through his childhood memories, where every dish is designed to surprise and humour even the most experienced palates.

The menu, presented as a seven-course tasting experience aims to transform the stuffy and overly-formal connotations often associated with a gastronomic set menu. Through Ben’s bold and imaginative lens, he will present diners with a collection of his personal and professional culinary souvenirs, serving dishes packed with explosive flavours, unconventional textures and Instagram-worthy plating. With the menu on the table only revealing three ingredients per dish, diners will have to discover for themselves the full depth and playful complexity of Ben’s flavoursome memories, which they will no doubt share too.

Every feast will start with an amuse-bouche; Egg n Soldiers, combing foie gras royale and a creamy scrambled egg mousse creating a reinvention of one of Ben’s favourite go-to dishes. Guests will then tuck into chicken liver Parfait with Blood Orange – a nod to one of Ben’s grandad’s favourite ingredients – and crispy chicken skin Granola served in a bowl to be eaten like cereal. This will be followed by pickled Beetroot served with a hearty braised Oxtail and Lemon Thyme consommé, inspired by his memories of eating oxtail soup in bed when under the weather.

Then on to a polished version of a British favourite, fish & chips, using charred Hake, Jerusalem Artichoke, a Vanilla reduction and heavenly Pont Neuf potatoes, made as Ben learnt in Paris, along with a saddle of tender Venison served with spiced Pineand roasted Parsnips.

Desert-lovers can also expect a trip down memory lane with Ben’s Pear served with Timur and Hazelnut crumb, in homage to Nana Murphy’s infamous pear crumble, before finishing with his Choc Ice, served with a honey and Milk mousse and Blackberrygel.

Ben Murphy said: “Designing a menu for W London has given me the opportunity to colour outside the lines and create some really bold dishes. Bringing together a selection of my childhood memories and my sense of humour whilst using a range of cutting-edge cooking techniques has been immense fun.”


Ben, aged 27, is currently Head Chef at Kensington’s Launceston Place and has had a formidable career, creating his own signature style under the mentorship of Pierre Koffmann at The Berkeley before making the move to Paris to work in the Three-Michelin-starred kitchens at Le Bristol. Respecting the importance of locally sourced products and the richness of ‘field to plate’ cooking and seasonality, Ben then returned to east London to lead the team at The Woodford, winning best restaurant in the Evening Standard London Restaurant Awards in 2016.

The Dining Series, which launched in 2017 to coincide with the opening of W London’s new bar and lounge, The Perception, started with a bespoke menu by Australian-born chef Magnus Reid and was followed by Ravinder Bhogal’s sell-out 100% vegan menu in spring 2018. The concept aims to welcome some of the capital’s most playful and renowned culinary talents to create a dinner menu combining their unique gastronomic identity with the daring attitude of W Hotels.

Ben Murphy’s seven-course tasting experience will be available every day from 5pm to 11pm at £49 per person. The Perception will also be plating up a smaller version of the menu for theatre goers during the festive period, where diners can enjoy two courses from £17.50 between 5-7pm daily.
