Join Lyle’s on Tuesday 29th and Wednesday 30th October, for the final Guest Series instalment of 2019 at Lyle’s, where James has invited Korean-born chef, Esu Lee, who is turning heads in Paris by bringing a taste of Asia via Sydney to the wine bar scene.
C.A.M offers a new take on the Parisian wine bar – offering natural wines and fusing traditional French cooking techniques with influences from Asian cuisine; serving up creative and explosively flavoursome dishes in an unassuming and stripped-back former souvenir shop.
Korean-born Esu completed his studies at Le Cordon Bleu in Sydney, before going on to work alongside acclaimed chefs Dan Hong, Jowett Yu and the late Jeremy Strode. After five years in Australia, Esu then spent time in the Korean military as Head Chef of the Commander, before moving over to Paris to open C.A.M. More recently, he has also taken time away to stay at the Baekyangsa Temple with South Korean monk Jeong Kwan, exploring cooking and philosophy.
